Fruity Salsa Tortillas

These tortillas can be either sweet or savory - either way they are super healthy!

Ingredients:

  • 1 egg white, lightly beaten
  • 2 teaspoons ground cinnamon
  • 250g strawberries, chopped
  • 2 fresh mangoes, peeled and diced
  • 2 kiwi fruits, peeled and chopped
  • Pulp of a passion fruit
  • 1 packet of tortillas

Method:

  1. Preheat oven to 180°c
  2. Heat tortillas in microwave on high for 30-60 seconds or until flexible
  3. Brush one side of tortillas with egg white and cut in half
  4. Fold each tortilla half into a cone shape.  Stand in a muffin pan, wide side down, and bake in the oven for 7-10 minutes or until brown
  5. Leave to cool in the pan
  6. Whilst tortillas are cooling, combine strawberries, mangoes, kiwi fruit and half the passion fruit pulp in a bowl to make a fruit salsa
  7. Sprinkle the salsa with cinnamon
  8. Put fruit mixture inside tortillas
  9. NOTE – this can also be done with vegetables (tomato, avocado, onion, corn etc)
