Sweet Potato Pizzas

Sweet potato pizzas are a healthy alternative to normal take away pizzas and take less time to make!

Ingredients:

  • 3 sweet potatoes, sliced into thick rounds
  • 1/2 teaspoon salt
  • 1 teaspoon extra virgin olive oil
  • 2 tablespoons tomato paste
  • 1 cup mozzarella cheese, finely grated
  • 4 slices of lean ham
  • 1 cup small basil leaves

Method:

  1. Preheat oven to 200°c
  2. Slice sweet potato into rounds.  Toss rounds with salt and teaspoon of oil.  Place onto two baking sheets in one layer and roast for 10 minutes or until just tender. Remove from oven
  3. Spread tomato paste onto sweet potato rounds and top with cheese, ham and one basil leaf
  4. Cook for a further 8 minutes in the oven or until cheese has melted
  5. Serve immediately
